South Africa
South Africa has a long history of grape growing and winemaking and whilst it is usually plonked in the ‘New World’ basket, we should remember that vines, and winemaking know how, were brought by the Huguenots when they fled persecution in France long before ‘new world’ wine became a thing. The combination of ancient soils, superb growing conditions and a medley of interesting and varied terroirs from the cool coastal vineyards of Elgin and Constantia right up to the high altitude Olifantsriver, makes it difficult to generalise about South African wine. Chenin Blanc is still the most important white grape variety, especially in arid, rugged Swartland, where we see it both as a single variety white wine and also a major component in blends. Other white varieties of note are the classic, structured Chardonnays found in Stellenbosch and fresh, crisp Sauvignon Blanc from the cooler coastal regions. Red wines can range from light, breezy cool climate Pinot Noir, to gutsy Bordeaux style blends and hearty Shiraz (Syrah) and Grenache. We mustn’t also forget South Africas very own Pinotage grape, a crossing of Pinot Noir and Cinsault that is unique to the country. The Muscat based dessert wines of Constantia were once considered amongst the finest wines in the world and still thrill the consumer whenever they are tasted. All in all, South African wine offers the perfect choice for all drinkers, giving the structure and history of the old world coupled with the fruit and accessibility of the new.

The 2021 Cartology is made from 90% Chenin Blanc and 10% Semillon from old, dry farmed bush vines. Following careful selection by hand the grapes are whole bunch pressed and lightly settled with no addititions to the natural juice. Wild yeast fermentation takes pace in a mixture of concrete eggs, clay pots and old barrels of various sizes, lasting anywhere between 3 weeks and 11 months. The wine is then aged on it' lees in tank for roughly 12 months with a further 6 months to settler in tank prior to bottling.

With 25% of the grapes showing signs of Botrytis at harvest time, this wine boasts stone fruit aromas, honeyed petrol notes, lanolin and a vibrant acidity. The bouquet displays beautiful elements of chalky,flint and minerally notes.The wine is juicy and opulent on palate entry and then a fine acidity arrives to provide a perfect foil to the inherent fruit “sweetness”. Despite being bone dry,the wine finishes with an appealing sweet/sour character,begging a second taste.
