The ferment is made in stainless steel and the wine bottled after the spring equinox. It is a lightfooted, violet and blackberry infused wine with elements of mineral coolness. A refreshingly breezy and bright Spanish red with notes of sour cherry, raspberry, violets and sweet spice. It's unoaked and very drinkable.

Newfound Wines, a small family owned winery located in the Sierra Foothills was established in 2016 and is the very essence of 'New California'. Matt and Audra were intent on intent on producing wine in the most sustainable way possible and tore out the existing vineyard that they purchased. Amongst the mesaures they took was to enlist the help of 200 goats to graze the hillsides and to naturally compost the site, as well as creating a fire safe zone by lifting the densely forested canopy and cover cropped with a recipe of legumes, clovers and nitrogen fixing green manures.
