Description
The 2021 Foundry Viognier is pale yellow with a clear, bright greenish hue. The nose is elegant with restrained yet perfumed aromatics of citrus, jasmine and sea breeze. These flavours follow through onto the palate which is crisp, linear and refined with crushed fresh fruit, succulent juiciness and finishes with a mineral steeliness which makes this wine ideal with food. There is a line of natural acidity running through the wine maintaining freshness and focus.
The grapes for this terrific wine are grown around 6km from False Bay, in vineyards that benefit from teh cooling ocean influence. Following harvest, the grapes are cooled then crushed and pressed with the free run Viognier juice being settled overnight before being run into second-fill French Allier oak white wine barrels. Half the barrels were inoculated while the other half underwent “wild”, un-inoculated fermentation. About half the wine underwent malolactic fermentation. The wine was matured on the lees for 7 months “sur lie” in barrel before blending and bottling.
