Gilles Remoriquet is forever looking for ways to improve the wines from his 12.5 hectare sustainably farmed domaine, whether that means a dedicated trip the Jura to see a specialist about selecting the right blend of manure, or investing in a second sorting table which eliminates under-ripe berries by flotation, he is not one to rest on his laurels. Cuvaisons in concrete vats are long, giving a light colour yet concentrated yet elegant fruit flavours. Wines are fermented with natural yeasts and never see more than 30% new oak, allowing the fruit to shine through.

The grapes for this medium weight, fruit led Julienas are hand harvested and left in tank for 10 days to macerate in order to optimise the colour and aroma of the wine. This 100% Gamay from Domaine Moulin Camus comes from grapes grown on a slope of pure mica schist which gives the wine juicy, rounded red fruits a bit of tautness and minerality. A warmer than normal, sulphur free maceration for three days helps bring out some warmth and roundness to the fruit, making it slightly beaujolais'esque but without the bubble gum/commercial edge that one would normally find in this price range.
