Description
Produced in tiny quantities, the Komokabras is made with 50 year old Albarino grown in high altitude vineyards on green granitic soils. Once pressed, the must is seperated into two 600 litre stainless steel vats, one of which undergoes malolactic fermentation off it’s lees, whilst the other remains on it’s lees but does not go through malolactic fermentation. The two vats are blended in the early summer following vintage and spend a little time on cork prior to release.
