Description
The nose shows citrus oil and pear, with some subtle floral/honeyed tones. The palate is very well proportioned, with firm mid-palate structure, medium rich mouth feel, and long carry. Flavour persists and even intensifies throughout its length. The wine finishes dry and saline, refreshing the palate. This vintage has a sappy, thirst-quenching quality about it.
The Cartology parcels are dry farmed bush vines, with a minimum age of 35 years, although most are between 40 and 50 years old. Average yields for these parcels is around 3 tons/Ha or around 20hl/Ha. Cartology 2022 is 92% Chenin Blanc and 8% Sémillon. Fermentation takes place in a mixture of cement eggs, clay pots, foudres and old oak barrels with natural yeasts and can last anywhere between 3 weeks and 11 months depending on the parcel. The wine is kept on lees for 12 months with a further 5 months on fine lees prior to bottling.

Around 2,000 hectares are vinified on 2 different sites, a major part of which is located on clay-limestone soils with some pockets of marl as well. The climate is Mediterranean, dry and hot during summer, but more temperate due to it's proximity to the sea.
