Description
Domaine Belleville was created in Rully at the beginning of the 20th century and has 22 hectares of vineyards spread throughout Burgundy. They produce an impeccable range of wines which have a true sense of place and provide delicious drinking.
The grapes for the La Pucelle see a gentle pressing and the must is left to settle for 12-24 hours before a slow and full alcoholic fermentation takes place in 228 litre oak casks at cool temperatures. The wine is then matured in oak casks for a period of 10-18 months with the proportion of oak used varying depending on the vintage. Lees stirring in barrel encourages both body and freshness.
An expressive bouquet of butter, mouth watering citrus and fleshy white fruits. The Pucelle is structured and impeccably balanced on the palate with a surprising mellowness backed by toasty notes and a very classy touch of minerality on the long, lingering finish.

Chasselas
This is a delicious, more'ish white made mainly from Chasselas, the grape variety which is typical to the Canton of Vaud. Yves and Antoine de Mestral like to play around with it, making wine several different styles, of which this was our favourite. Quite classic in style for Chasselas with a lovely balance of the creamy, fruity, floral and mineral palate. Rich and complex, this is a perfect wine to sip on its own, enjoy with fish and seafood.
