Description

This is the flagship wine from Vassaltis and showcases Santorini Assyrtiko at it’s best.  Hand harvested fruit is whole bunch pressed and fermented in stainless with the finished wine resting on lees for 7 months.  This terrific white wine is typically intense with powerful mineral and pumice stone characters mingling with ripe tropical fruits, saline tinged acidity and intense citrus flavours on the finish.

Fournillon have 23 hectares of vines in Chablis in the cool, north of burgundy and are predominantly producers of classic, steely Chablis (see our fantastic value 'house' Chablis), but they also produce some red and this delicious cremant from 100% Pinot Noir.  All fruit is hand-harvested and vinified carefully to produce an easy drinking, fruit-forward fizz that is well balanced and nicely rounded with a fine mousse.  Excellent as an apertif.
