Description

Minimalist wines is a true terroir project and makes wines from the cool, coastal vineyards of the Cape.  The fruit for the ‘Stars in the Dark’ Syrah comes from two mature, low lying vineyards that are a mere 8km from the coast, and is matured in neutral french oak barrels of 228 & 300 litres for 12 months.  The grapes are hand-harvested in the cool early morning and crushed by foot following an overnight cold soak.  Fermentation is with natural yeasts and is followed by a single daily punch down of the skins. 


The wine is very much of it’s place, reflecting the harsh growing conditions in Agulhas alongside the generosity of the vintage.  Much more Northern Rhone than new world fruit bomb, this is complex, silky and multi-layered, balancing power and finesse in equal measure.

Chateau Saransot-Dupre is a favourably sited 17 hectares property that lies between Fourcas Dupré and Fourcas Hosten in Listrac.  Due to Listrac’s cooler temperatures, Merlot and Cabernet Franc are favoured over Cabernet Sauvignon to form the majority of the blend, helping them achieve optimum ripeness.  Much like Chateau Fourcas Hosten, the wines have improved year on year since 2010 and the property were put on the radar thanks to a certain Robert Parker hailing the 2010 vintage as 'classed growth quality'.  High praise indeed!
