Vincent Couche is a biodynamic grape grower in Champagne who also owns some vines in Burgundy, where he makes this de-classified Cremantde Bourgogne. Taking a ‘Grower Chamagne’ approach to cremant, 30% of the grapes are oak fermented and aged in a solera so do not conform to the regulations of Cremant. Who cares when the wine is this good! Vibrant and amazingly drinkable, this zesty, complex and downright drinkable fizz is true real delight, showing zesty mineral tinged citrus, baked apple and whiffs of brioche. No added sulphur makes it all the more appealing.
