Description
The Vallisto Torrontes is a fabulous example of this intriguing and highly aromatic white grape. Made from 70 year old vines grown between 1700 and 2000 metres above sea level, the Vallisto Torrontes shows the distinctive exotic aromas jasmine, orange blossom and peach on the nose with a lively, zippy palate that is dry and fresh with mouth-watering acidity on the finish. A lovely aperitif if you can handle the aromatics, but even better with food, especially spicier dishes like Thai curries.
A Vallisto is a person from the valley, specifically from Cafayate Valley. This project is about expressing the virtues of the truly unique terroirs in and around this beautiful, remote area of Argentina. It is also a rescue mission, giving voice to long-forgotten vineyards and lesser-known grape varieties, pulling together a youthful, dynamic approach to winemaking and the kind of natural resources that take millennia to form.
