Description

The Wild Ferment Assyrtiko by Gaia is an astoundingly good, highly complex white wine grown in the rugged vineyards of Santorini.  Grapes are hand harvested with the free run juice fermented with natural yeast in a mixture of stainless steel (45%), old barrels (45% equally mixed between French & American oak and Acacia), and ceramic vat.  Fermentation is natural with batonnage and 6 months ageing on fine lees prior to bottling.

The wine itself is beautifully complex with aromatics of the acacia wood mixed with vanilla, toasty oak, citrus and touches of smoke.  The palate is layered and complex mixing citrus fruits, mineral notes and a refreshing salinity to the long, tangy finish.  Delicious and distinctive!
