Description
The Rully Rouge Chaponniere from Belleville is such a pretty wine, showing lovely fresh strawberry and raspberry fruit on the nose, followed by smoky secondary aromas. Fruit forward and delicate on the palate, there is a satisfying complexity with good ageing potential.
Domaine Belleville were established at the begining of the 20th Century and have 22 hectares of vines spread throughout this diverse region, making a variety of wines which show the myriad characteristics of Chardonnay and Pinot Noir when grown in different terroirs.
The Pinot Noir grapes for the Chaponniere are all sorted and destemmed before undergoing a cold maceration which lasts for between 3and 5 days, and is followed by alcoholic fermentation for 15-20 days. During fermentation, the wine is pumped over once or twice a day in addition to a daily punching down of the cap to extract the tannins and impart structure to the wine. The free-run juice is blended with the pressed juice before ageing in oak casks for a period of 12-16 months.

The Bourgogne Pinot Noir Epineuil from Domaine Fournillon is a beautifully fresh Pinot with bright, red fruit flavours and supple tannins. This delightful red wine comes from parcels of vines in the village of Epineuil, with the majority of Pinot Noir grapes are harvested mechanically for efficiency so they can be transported to the estate for maceration in stainless steel tank for a period of 2 weeks, with regular punch downs. After separating the skins from the juice it is aged in stainless steel tanks for a minimum of 15 months.
