Description

The Moment Of Silence by Blankbottle has aromas of candied lemon, cooked apple and mango with a core of minerality. Soft and voluptuous, it has a lovely ripeness and a fleshy, creamy mouthfeel, which leads to a perfect tangy freshness giving some zip to its otherwise mellow feel.

The ethos at Blankbottle is for the wine to do the talking, hence the lack of information on either back or front label and no mention of the grapes used to make the wine.  The Moment of Silence has come to be Blankbottles most important wine in terms of production and they now produce 10,000 bottles per year.  The exact blend and vineyard source varies from vintage to vintage, but is generally comprised of Chenin Blanc from two organically farmed vineyards along with Grenache Blanc and Viognier.  Each parcel of grapes bring their own character and are fermented in either large old oak barrels, Amphora or concrete egg depending on the parcel.  There is a little bit of skin contact and also lees ageing to add texture and complexity.

2021/22 Cremant de Bourgogne Brut, Domaine Fournillon

Pinot Noir

Fournillon have 23 hectares of vines in Chablis in the cool, north of burgundy and are predominantly producers of classic, steely Chablis (see our fantastic value 'house' Chablis), but they also produce some red and this delicious cremant from 100% Pinot Noir.  All fruit is hand-harvested and vinified carefully to produce an easy drinking, fruit-forward fizz that is well balanced and nicely rounded with a fine mousse.  Excellent as an apertif.

This Macon Chaintre is lovely and bright in the glass, with a fresh, floral bouquet that leads to citrus fruits on the palate and a fine, mineral tinged finish.  Great value and a true crowd pleaser for Burgundy fans thanks to its structure and finesse.

Picpoul

The Montagnac cellar was created in 1937 and has grown with vineyards stretching over 7 communes all along the Thau lake in the mountainous foothills of Hérault. Around 2,000 hectares are vinified on 2 different sites, a major part of which is located on clay-limestone soils with some pockets of marl as well. The climate is Mediterranean, dry and hot during summer, but more temperate due to it's proximity to the sea.
