The Sorine estate is owned and run by the heirs of one of the oldest families in Santenay. The family estate was rebuilt in 1946 by Jean Sorine and was then taken over by his son Christian in 1990. Today Christian is joined by his wife Emma in the vineyards and winery. With limited vineyards available in Santenay the estate has grown and now also includes some Maranges.

The Parcellaires de Saulx was created in 2017 in Meursault on the site of an historic property.  They work with the finest growers throughout Burgundy to select the very best grapes possible which they vinify and age in their 1500 square metres of cellars.  The idea is to produce the truest expression of terroir possible and work predominantly with growers who take an organic and biodynamic approach to vineyard management.  The results are a truly stunning string of releases of micro-parcels.  We are lucky enough to grab some whilst they are available.

Pinot Noir

Fournillon have 23 hectares of vines in Chablis in the cool, north of burgundy and are predominantly producers of classic, steely Chablis (see our fantastic value 'house' Chablis), but they also produce some red and this delicious cremant from 100% Pinot Noir.  All fruit is hand-harvested and vinified carefully to produce an easy drinking, fruit-forward fizz that is well balanced and nicely rounded with a fine mousse.  Excellent as an apertif.

Eventhough this is a relatively new domaine, having been created in 2008, the Gondard familly have been ensconced in the Mâconnais village of Viré for centuries and have been vine growers since 1981. Prior to setting up in 2008 they were selling their grapes to the local co-op but came to realise that their parcels of 30 to 60 year old vines produced grapes of such good quality that they deserved to be vinified seperately and so created their own domaine and started to vinify and bottle the wines themselves. Their range of wines show the typical richness of the Mâconnais, but also a surprising level of elegance and minerality.

Domaine Michel Cheveau is a 14 hectare family estate run by Nicolas Cheveau, his brother Julien and wife Aurelie. The family cellars are on the outskirts of the village of Fuissé, being built only five years ago as a result of the family house getting too cramped.  The vineyards are worked by hand, by horse and by tractor, and without the use of any agrochemicals. Cheveau is one of the few vignerons who do not fertilize either, choosing to use sward management to stop soil erosion and keep a balance of nutrients in the soil. His vineyards can always be recognised for being meticulously looked after, but fizzing with life.

Pinot Noir

From parcels of vines in the village of Epineuil, the majority of Pinot Noir grapes are harvested mechanically for efficiency so they can be transported to the estate for maceration in stainless steel tank for a period of 2 weeks, with regular punch downs. After separating the skins from the juice it is aged in stainless steel tanks for a minimum of 15 months.

The grapes for this wine are hand harvested from 2 parcels in the heart of Mercurey where the soil is clay and limestone. They spend 10-15 days fermenting in the tank before being put into French oak barrels, 30% of which are new.  The wine then spends 12 months in barrel before being blended and bottled.

Domaine Ludovic Greffet is a small, 6.5 hectare, traditional estate situated in Solutre-Pouilly and is worked by hand by the 4th generation.  This beautiful Pouilly Fuisse sees a traditional fermentation and ageing in ancient, 40 - 80 year old, oak Foudres for 8 months.  The oak imparts texture as opposed to inherently oaky characteristics, resulting in a wonderful Burgundy with some depth and richness alongside the flinty freshness.

The grapes for this approachable Puligny are hand harvested and undergo a gentle pressing.  The juice is then left to settle for a few days then put into French oak barrels, 30% of which are new. Indigenous yeasts are used for fermentation and the wine spends 12 months in barrel before being blended and bottled.  Great persistence in the mouth, this wine has a wonderful freshness to it and can be enjoyed in it's youth.
