Description

The 2021 Cartology is made from 90% Chenin Blanc and 10% Semillon from old, dry farmed bush vines.  Following careful selection by hand the grapes are whole bunch pressed and lightly settled with no addititions to the natural juice.  Wild yeast fermentation takes pace in a mixture of concrete eggs, clay pots and old barrels of various sizes, lasting anywhere between 3 weeks and 11 months.  The wine is then aged on it’ lees in tank for roughly 12 months with a further 6 months to settler in tank prior to bottling. 


The wine shows a wonderful purity and freshness with citrus and pear fruit, intense salinity and focus and a wonderfully open character.
