Over the past decade, Uk wine has become one of the fastest growing agricultural sectors. There are now over 500 Vineyards spread across England and Wales, with recent plantings being made in Scotland. The UK is very quickly building a reputation for world class wines, both still and sparkling. South East England in particular, and all along the south coast, there is outstanding Terroir. As a result, even French champagne houses such as Taittinger and Pommery are investing in vineyards here.
The majority of the vines planted for sparkling wines are the traditional champagne grapes of Chardonnay, Pinot Noir and Pinot Meunier. There is also an increasing number of still wines making their way to the english shelves. The grapes used for these wines are made as either a single varietal from Chardonnay, Pinot Noir, Pinot Gris, Bacchus or as a blend with other varieties such as Pinot Blanc or Rondo. Cool climate hybrids such as Bacchus and Ortega also make crisply refreshing and quintessemtially English styles of white wine.

The 2015 Special Reserve Dry White, Sherborne Castle is dry, crisp white that is fresh with a delicate, floral character.

The tradition of wine making on the Sherborne Castle Estates started in the Middle Ages when Bishop Roger, who built the Old Castle planted a vineyard on the northern side of the lake. By 1146 this was sufficiently mature to be mentioned in the bull of Eugenius II. In 1982, the tradition was revived on the estate by John Wingfield Digby at Wake Court in Bishops Caundle.

The nose is complex with ripe gala apple and poached pear. Some floral notes of apple blossom and honey suckle. A seriousness here too, with wet beach pebbles and toasted granary bread. A well-integrated orchard fruit acidity. Confected apple, some creaminess and great texture. A lovely salinity and citrus balances well. Some light brioche and almond notes too.

The 2020 Langham Dry White is a blend of 82% Chardonnay and 18% Madeleine Angevine that has been fermented using natural yeasts in mainly stainless steel with a little bit of oak, and aged for 9 months before final blending and bottling.  Very pale in the glass with an intense nose of zesty grapefruit, passion fruit and fresh lemon.  Crisp Granny Smith apple fruit comes through on the palate with citrus tinged acidity and a thrist queching lick of salinity.  Light, crisp and very refreshing.

This complex Rosé NV is a blend of 46% Pinot Noir, 18% Pinot Meunier, 36% Chardonnay, and is made from 85% base wine from 2018 and 15% reserve wine.  The wine offers aromas aplenty of cherry bakewell, pink lady apple skin, raspberry yoghurt & wild strawberries. The palate reflects this fresh red berry profile, but it is also more serious & has great depth. Cherry yoghurt, young wild strawberry & raspberry coulée bring the fruit profile to the forefront, whilst a more savoury & saline note rounds off the wine.
